Gluten Free Chocolate Brownies


The last two months have been like a roller coaster, with appointments that kept being shifted and rescheduled, urgent last-minute work to do, and some small and not to worry about (but... painful!) health issues that have forced me to slow down a little...
All this, requires sweetness and gratification, and chocolate -at least for me- does it best! Here below a quick and simple recipe for gluten-free brownies, with the optional add in of blackberries and rice crispy, which you can replace with other fruit or cereals of choice. The brownies are extra chewy, and quite moist, really delicious, let me know if you like them too ;-)

RECIPE
GLUTEN FREE CHOCOLATE BROWNIES
Prep. Time: 10 minutes, Bake Time: 20 minutes
Ingredients (9 brownies):
100 gr dark chocolate
80 gr butter
2 free range eggs
120 gr brown sugar
30 gr whole oat flour
30 gr ground hazelnut (or almonds)
2 teaspoon baking powder
Optional: rice crispy + blackberries
Method:
Melt dark chocolate with butter, keep aside and let cool.
Whisk eggs and sugar for about 5 minutes, add the melted butter and chocolate, spoon in the previously sifted oat flour and ground almonds (half and half), 2 teaspoons of gluten free baking powder, a pinch of salt, (+rice crispy, and a handful of roughly sliced blackberries - optional) and amalgamate well.
Bake at 180° for 18/20 minutes.
